#24 Pound Cake {Baking Bible Challenge}

I thought I would choose a sturdy lunch box appropriate cake this week, so I picked Pound Cake, a round fruit cake with no icing or fancy trimmings.



It looks a little plain, and I was disappointed that the fruit sunk (perhaps I didn't dry my cherries well enough), but it has got a really good flavour. I've never thought of myself as the world's biggest fan of fruit cakes, but since taking on this challenge I am beginning to warm to them!

I made this cake first thing after breakfast, and left it in the oven whilst we went out to run some errands. Two hours later we returned to a delicious smelling house and a finished cake, just in time for me to sample with my lunch!

  1. I've never managed to make a fruit cake where the fruit didn't sink, no matter what I've tried. I don't think I've ever had pound cake, is it like an ordinary fruit cake or heavier in texture?

    1. I think my mixture was too wet, but I followed to recipe so not sure why, can only think my cherries were a little damp from washing them. I'd never had Pound Cake before either, it's much lighter than ordinary fruit cake, it's more like a cake that happens to have fruit in, rather than a fruitcake x

    2. In that case I'll be giving one a go as I don't really like normal fruit cake. :-)
