Again, I seemed to have failed with my fruit distribution - the cherries mostly sunk to the bottom. I really thoroughly washed and dried them this time, so I don't know how Mary Berry does it. Has anyone got any ideas?
Still, the cake was light and moist and it got the thumbs up from all who ate it, so I think I will count this one as a success.

Cor yes I would definitely go for a big slab of cherry cake! As for Mary's fruit distribution I reckon she pours a little batter in the tin then sprinkles some of the fruit on and repeats the process until the tin is full. In other words too much effort when it's just going to be eaten. :-)
ReplyDeleteSorry Vickie, it's all gone! *licks lips* That method would seem to be rather too much effort for me too! My mum reckons she doesn't wash hers like Mary Berry recommends, so I might try not washing them next time, that's even less effort! xx
DeleteYour mum could be on to something there as my mum-in-law doesn't wash the fruit for her Christmas cake and it's always evenly distributed. I like the sound of even less effort. :-)
