#33 Carrot Cake {Baking Bible Challenge}

We're going to lunch with a friend tomorrow and I thought it only fair that if she's providing lunch I should provide cake. I settled on carrot cake as it's a classic and who can resist that delicious cream cheese frosting?



Oddly, Mary Berry's carrot cake recipe contains banana. I have a couple of carrot cake recipes I like, but neither of them uses mashed bananas. I really don't see them as being necessary, as I feel their flavour is too strong, resulting in this cake being more of a banana cake with grated carrot...

The cake isn't particularly sweet, which makes it go exceptionally well with the cream cheese frosting. I've never made the cream cheese topping for any of my previous carrot cakes, but the next time I make one I think I'll use my trusted recipe for the cake but Mary Berry's cream cheese icing recipe.

Unfortunately I didn't give much thought as to how I'm going to transport the carrot cake tomorrow; so fingers crossed it makes it in one piece with topping still on top!

I'm 15% of the way through my challenge now; it doesn't sound that much, but this will be the 33rd cake that I've baked from Mary's Baking Bible.
