I am making a little sweet treat today, as it's the weekend, and it's cold. But who needs an excuse really?!
This is a recipe from my childhood, is incredibly easy and quick but very delicious, especially if you like chocolate and coconut! Here's what I did:
Ingredients - Base
120g margarine
60g granulated sugar
120g self raising flour
60g desiccated coconut
2 tsps cocoa powder
Ingredients - Icing
120g icing sugar
1 tsp cocoa powder
I melted the margarine and sugar in a saucepan over a low heat.
Whilst the butter was melting I weighed out and mixed together the flour, coconut and cocoa, then I stir into the melted margarine and sugar.
Using my silicone spatula I scraped out the pan and pressed the mixture into the tin and cooked in the oven for 15 minutes.
Whilst the base was cooking I mixed together the icing sugar and cocoa with a little water to make the icing.
Once the base was cooked I took the tray from the oven and immediately iced it, as the heat helps the icing spread out. I also used a palette knife to help me spread it evenly.
Once iced I cut it into squares, before the base hardened too much.
Then I sampled them: yummy!
