#60 Apricot Swiss Cakes {Baking Bible Challenge}

These were a spur of the moment bake when a friend said she was dropping in for tea at the weekend. Although they are called 'cakes', once I'd looked at the recipe I thought they sounded a lot more like biscuits, and low and behold, once out of the oven and sampled they were quite the taste and texture of a Viennese biscuit.

There is no photograph in the book, just a line drawing, so I'm not sure how mine turned out compared to Mary Berry's, but they were certainly deliciously buttery as she describes.

I found the mixture pretty tough to pipe at first, but once it had warmed up a little I was able to pipe fairly neat swirls. And I learnt not to overfill my piping bag!
